Pav Bhaaji


Pav Bhaaji is an heavenly Indian street food. Very famous in the streets of Mumbai and also in Hyderabad.
Pav in Marathi means ' Bread ' and ' Bhaji ' is curry made with mixed vegetables.

Ingredients
For Bhaaji

Onions diced                                          2
Green chili's  diced                                 2 
Tomatoes diced (small)                          2
Tomato puree                                        4 tsps
Asafoetida(Hing\Inguva)                        1/8th tsp
Pav Bhaji Masala                                   2-3 tbsps
Turmeric powder                                   1/4 tsp
Dry Fenugreek\Kasuri Methi leaves       1 tbsp
Lime\Lemon                                          1
Red Chili Powder                                  1/2 tsp
Red Color (Optional)
Ginger and Garlic Paste                         1 tsp
Salt                                                       to taste
Water
Butter (unmelted)                                  2-3 tbsp
Oil                                                        1-2 tbsp
Cilantro\Coriander chopped                  1/4 cup
Any mixed vegetables:
Potato                                                  1
Green Peas and Carrot Pieces              1/2 cup
Cauliflower                                          2 florets
Minced BellPepper\Capsicum              1(if small) or 1/2(if medium\large)

For Pav

Store bought Pav
Butter
Diced Onions                                     1
Coriander\Cilantro chopped               to garnish
lime\lemon                                         1 wedge

Recipe

       Bhaaji Preparation:
  • Pressure cook all the vegetables. Or boil them in microwave till all the vegetables are mushy and keep it aside. Florets of cauliflower can be grated or just be boiled as it is and latter be mashed with all the veggies.
  • Turn on the stove to low\medium and place a skillet.Drop oil and 1 tbsp of butter. If you are not counting on calories replace oil with butter. Remember, Rich in Butter is Rich in Taste in this Pav Bhaaji .Ofcourse, rich in calories too ;)
  • When its warm add few fennel seeds. This step is purely optional.
  • Add diced onions and saute till its caramelize and add green chili's and saute it for 2 min.
  • Add Ginger garlic paste and saute till it losses its raw smell.
  • Add capsicum\bellpepper and saute it for a min or two.
  • Add diced tomatoes and saute it till it turns mushy.
  • Now add tomato puree. If you don't wanna add puree, you can just add 2-3 tomatoes more for tangy flavor and saute for a min or two.
  • Add all masalas - turmeric powder,red chili powder, pav bhaaji masala.
  • Quickly mix it and add little water (in order to prevent the masalas from burning which changes the taste to bitter).
  • Take Kasuri methi\Dry Fenugreek leaves into your palm and mash it with your other palm and it to the mixture.
  • Now add the veggies into this mixture and mix.
  • Now with a masher mash all the veggies. If you feel this is difficult, you may mash all the veggies prior to adding to the sauce. Mash such that diner cannot make it out what veggies are added into it.
  • In the whole process,sauce should never be dry. Keep moisturizing it by adding water little by little when required.
  • Squeeze half of the lime\lemon,add cilantro leaves and mix.
  • Now add 2 tbsp of butter to the sauce.Bhaji is Ready! keep the flame to warm\sim to keep it warm till we prepare pav.
       Pav Preparation:
  • Take 1 or 2 pav's and cut in the middle of the pav using a knife till it reaches its other end. (but do not cut into two pieces)
  • In an other skillet add 1-2 tsp of butter.
  • When butter is melted, you may add pinch of pav bhaaji masala(optional) and place the pav's on the skillet, with inner pav facing the skillet.
  • Toast it till the pav facing the skillet turns into lite brown in color.
  • When it's done, place it into the serving plate just as shown in the picture , add little bhaaji - a small piece of butter may be added on top of the bhaaji and can be garnished with cilantro leaves and raw diced onions. Else onions may be added at a side. Place a wedge of lime\lemon.
  • That's it! Garama Garam Pav Bhaaji ready to serve!
