Ingredients

Sooji    (Bombay\Upma Rawa)                         -        1 cup
Cashew Nuts                                                    -        Few
Ghee  ( Clarified Butter )                                   -       1-1.5cup
Milk                                                                 -        2 cups
Sugar                                                               -        1 cup
Water                                                              -        1 cup
Elachi (Green Cardamom) Powder                   -        1 tsp


Procedure
  • Turn on the heat(stove) to low and place the wok\kadai on it
  • Pour 1/2 cup of ghee into it
  • When the ghee is warm add cashews and fry. Do not burn them. When  they turn to golden brown, take them out and keep it aside.

In my childhood I used to wait for Dassera,as my mother used to make these yummy rawa ladoos on Dassera. But now when I started cooking I realized that this is the one of the most easiest and quick sweet to make especially when you have unexpected friends\guests. Try this and drench with compliments.

Coconut Rice (with Coconut Milk)


Category :

Course Type : Main
Prep Time : 45 mins
Serves : 3-4 people (of avg appetite)

Ingredients:

Basmathi Rice -> 1.5 cups
Coconut Milk -> 1.5 cups
Water ->1.5 cups
Green Cardamom (Elachi) -> 3
Black Cardamom (optional) -> 1
Cloves -> 8
Chillies sliced vertically ->10 to 12
Bay Leaves (optional) -> 2
Onions sliced vertically -> 2
Ginger & Garlic Paste -> 1 tsp
Roasted Cashews.
Salt -> to taste
Oil -> 4 tbsp

Procedure:

1) Soak Basmati rice in water for at-least 30 mins.
2) Put oil in wok/skillet.
3) When oil gets hot add spices and stir till the aroma is released from spices.
This should take few seconds.
4) Immediately add onions and chillies and fry till lite golden brown.
5) Add Ginger and Garlic paste and fry for couple of mins till the raw smell of it goes way.
6) Add Salt.
7) Add this mixture to the rice.
8) Add coconut milk (either fresh or canned) to rice and give it a stir.
9) Now switch on the Rice Cooker.
If using pressure cooker: Turn it off after 2 whistles.
10)Garnish it with Cashew Nuts and Serve Hot.

Tastes good with: Raita or with any Masala curry (Veg/Non-veg).
Tastes great with chicken curry or potato curry.
