Tomato Rice

Ingredients:
  • Long grain(Basmati) rice => 1 cup
  • Tomato's (medium sized) =>3
  • Green chillies(medium sized) =>8
  • Onion    =>1
  • Cinnamon =>1.5 inch 
  • Cloves     => 4
  • Green Cardamon =>2
  • Ginger and Garlic paste  =>1 tsp
  • Turmeric powder => 1/8th tsp
  • Salt => 2 tsps
  • Water => 1.5 cups
  • Oil => 2 tbsps
  • Ghee(Clarified Butter) => 2 tsps
  • Roasted Cashew Nuts (optional)
  • Optional Spices:
    • Bay Leaf => 1
    • Black Cumin (Shahi Jeera) => 1 pinch
    • Black Cardamon =>1
 
Procedure:
  1. Slice Onions,dice tomatoes and slit the green chillies.
  2. Wash and soak the rice in 1.5 cups of water for 1 hour or for at-least 30 min in your (electric/pressure)cooker.
  3. Take green cardamon,cinnamon and cloves into a blender and blend it, till a fine powder.
  4. Put oil and ghee in a wok\skillet.
  5. When the oil is warm add the optional spices and the blended powder and give it a stir.
  6. Quickly before the spices get burnt add sliced onions and slit green chillies.
  7. When the onions are slightly brown add ginger and garlic paste and give it a stir.Keep string till the g&g paste looses its raw odor.
  8. Now add the diced tomatoes and keep string till it cooks completely (becomes slight paste).
  9. Now add this mixture to the rice and switch on the cooker.
  10. If cooking in a pressure cooker, turn off the stove after 2 whistles.
  11. When its done give it a stir and take into serving bowl and garnish it with roasted cashews.
  12. That's it! Yummy Tomato Rice all ready to eat! :) Tastes good when its warm or cold.
