Rawa Ladoo

Rawa Ladoo made with sooji,milk and sugar is scrumptious.
In my childhood I used to wait for Dassera,as my mother used to make these yummy rawa ladoos on Dassera. But now when I started cooking I realized that this is the one of the most easiest and quick sweet to make especially when you have unexpected friends\guests. Try this and drench with compliments.

Ingredients



Sooji    (Bombay\Upma Rawa)                       1 cup
Cashew Nuts                                                           Few
Ghee  ( Clarified Butter )                                    1-1.5cup
Milk                                                                            1/2 cup
Sugar                                                                          1 cup
Elachi (Green Cardamom)                                 4

Procedure
  • Take green cardamom into a blender and blend it.  
  • Turn on the heat(stove) to low and place the wok\kadai on it.
  • Pour 3/4 cup of ghee into the wok.
  • When the ghee is warm add cashews and fry. Do not burn them. When  they turn to golden brown, take them out and keep it aside.
  • In the same ghee saute sooji till it looses its raw smell and changes its color to lite brown in color and keep it aside.
  • Now add the green cardamom powder to the milk and heat it.
  • Set the milk aside to cool down till its warm enough to make ladoos.
  • Add sugar to the sooji which is at room temperature and mix well.Do not add sugar when sooji is got or warm.
  • Add 1/4 cup of ghee to sooji and mix. This is optional. This adds more taste.
  • Now pour milk little by little to the sooji mixture and make ladoos.
  • NOTE: Milk is just used as binder to make round in shape (ladoos).Do not over pour milk. Just add as required.You actually might not use all the 1/2 cup of milk.
  • Now garnish each ladoo with cashew and keep it aside for few min. Initially it may look its too moist.But,later it would absorb all the moisture.
