Oatmeal Upma
Ingredients

Oatmeal 1/2 cup
Water 1cup
Channa dal 1/2 tsp
Urad dal 1/2 tsp
Mustard seeds 1/2 tsp
Cumin seeds 1/4 tsp
Ginger minced 1/2 tsp
Curry leaves
Mixed vegetables 1/4 cup or more
Green chillies 4-5 ( depending on how spicy you want)
Oil 2 tsps
Garam Masala 1/4 tsp
Cinnamon stick 1 inch
Salt
Directions
------------
1) In a slim flame heat oil in a pot. When the oil is hot , time for tadka. keep stirring until we add veggies in.
2) Add channa dal . When its almost turning brown, time to add urad dal.
When both turn golden brown, add mustard seeds. When they splutter add cumin seeds. Sauté n add ginger and green chillies. Finally add curry leaves and mixed vegetables and stir.
3)Raise the heat/flame to medium , cover the pot with lid. Add salt n stir. keep stirring occasionally.
4) When the veggies are almost done add water n an inch of cinnamon stick if you like to flavor it. It's optional. However, I would like to add. After all , who would not like a pinch of flavor in our dish :)
5) When the water comes to boil, add oatmeal. Stir and close the lid.
6) Let the heat/flame be in medium heat. Stir occasionally. Over stirring makes oatmeal mushy. To remain its texture just stir occasionally.
7) Point to note: oatmeal gets cooked in 5 mins . So just keep an eye on it.
8) When it's done sprinkle garam masala on top n close the lid. Keep the heat to minimal for a min or two.
8) Turn off the stove n let it remain as it is for 5 mins.
9) Now stir gently to let the garam masala be mixed with oatmeal
10) All done! Serve hot n enjoy!

Dondakaya\Tindora Fry
Dondakaya fry is my all time favorite. When I was in India along with my parents, I literally used to wait for Saturdays. As my mother used to make my favorite Tomato-Pappu and Dondakaya Fry every saturday. Me and my sisters and brothers would always fight to have large share of it. And now I fight with my husband :D

IngredientsSooji (Bombay\Upma Rawa) - 1 cup
Cashew Nuts - Few
Ghee ( Clarified Butter ) - 1-1.5cup
Milk - 2 cups
Sugar - 1 cup
Water - 1 cup
Elachi (Green Cardamom) Powder - 1 tsp
Procedure
- Turn on the heat(stove) to low and place the wok\kadai on it
- Pour 1/2 cup of ghee into it
- When the ghee is warm add cashews and fry. Do not burn them. When they turn to golden brown, take them out and keep it aside.
